Rename Root Folder with New Employee

We have a large folder that a previous employee was managing who is no longer with us. When originally setup the personal folder was being used and is still in use with the email address of this former employee. We assigned the new employee to this root folder. The issue is the email from the old employee is the root folder name but the new employee has a different email. What is happening is users are getting a notification that oldemployee@ourdomain.com uploaded a file. People are reaching out to that email and not getting a response. So my question, how can I update the root folder name to the current employee's email? Please advise...
